Ingredients
  • 1 cup Brown Rice
  • 1 cup Quinoa
  • 1 cup Buckwheat
  • 0.5 cup Almonds
  • 0.5 cup Cashews
  • 0.5 cup Pecans
  • 0.25 cup Dried Cranberries
  • 0.25 cup Fresh Parsley
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
Instructions
  1. Rinse the brown rice, quinoa, and buckwheat under cold water.
  2. In a large pot, bring 4 cups of water to a boil. Add the rinsed rice, quinoa, and buckwheat. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the grains are tender.
  3. Meanwhile, in a dry skillet, toast the almonds, cashews, and pecans over medium heat until lightly browned and fragrant. Remove from heat and let cool.
  4. Once the grains are cooked, remove from heat and let rest for 5 minutes. Fluff with a fork.
  5. In a large bowl, combine the cooked grains, toasted nuts, dried cranberries, fresh parsley, olive oil, lemon juice, salt, and black pepper. Toss gently to combine.
  6. Serve warm or at room temperature.
