Ingredients
  • 1.5 cup Basmati Rice
  • 0.5 cup Mixed Nuts (e.g., almonds, cashews, pistachios)
  • 1 medium Onion, chopped
  • 2 clove Garlic cloves, minced
  • 2 cup Vegetable broth
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Cumin powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper powder
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh cilantro, chopped
Instructions
  1. Rinse the basmati rice under cold water until the water runs clear.
  2. In a large saucepan, heat olive oil over medium heat.
  3. Add chopped onion and minced garlic cloves. Sauté until onion turns translucent.
  4. Add turmeric powder, cumin powder, salt, and black pepper powder. Stir well.
  5. Add rinsed basmati rice and mixed nuts. Stir well to coat the rice and nuts with the spices.
  6. Add vegetable broth and bring to a boil.
  7. Reduce heat to low, cover the saucepan, and let it simmer for about 15-20 minutes or until the rice is cooked and all the liquid is absorbed.
  8. Remove from heat and let it rest for 5 minutes.
  9. Fluff the rice with a fork and garnish with freshly chopped cilantro.
  10. Serve hot and enjoy!
