Ingredients
  • 1 cup Brown rice
  • 2 cup Vegetable broth
  • 1/2 cup Mixed nuts (almonds, cashews, pistachios)
  • 2 tablespoon Olive oil
  • 1 small Onion
  • 2 clove Garlic
  • 1/4 cup Dried cranberries
  • 2 tablespoon Fresh parsley
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Instructions
  1. Rinse the brown rice under cold water.
  2. In a saucepan, bring the vegetable broth to a boil.
  3. Add the brown rice to the boiling broth, cover, and reduce heat to low. Cook for 25 minutes or until the rice is tender.
  4. In a separate pan, heat the olive oil over medium heat.
  5. Add the onion and garlic to the pan and sauté until translucent.
  6. Add the mixed nuts, dried cranberries, parsley, salt, and black pepper to the pan. Cook for 2-3 minutes.
  7. Once the rice is cooked, fluff it with a fork and transfer it to the pan with the nut mixture. Stir well to combine.
  8. Remove from heat and let the pilaf rest for 5 minutes.
  9. Serve hot and enjoy!
