Ingredients
  • 2 cup Chickpeas
  • 1 cup Quinoa
  • 1 cup Spinach
  • 1 cup Red bell pepper
  • 1 medium Onion
  • 2 clove Garlic
  • 2 tablespoon Ground flaxseed
  • 2 tablespoon Nutritional yeast
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Olive oil
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a food processor, combine chickpeas, quinoa, spinach, red bell pepper, onion, garlic, ground flaxseed, nutritional yeast, cumin, paprika, salt, and black pepper. Pulse until well combined but still slightly chunky.
  3. Shape the mixture into small balls and place them on a baking sheet lined with parchment paper.
  4. Drizzle olive oil over the balls and bake for 20 minutes, or until golden brown.
  5. Remove from the oven and let them rest for 10 minutes before serving.
  6. Enjoy!
