Peel and dice the sweet potatoes.

Heat vegetable oil in a large pan and sauté the onion, garlic, and ginger until fragrant.

Add the curry powder, turmeric powder, cumin powder, coriander powder, chili powder, and salt to the pan. Stir well.

Add the sweet potatoes and stir to coat them with the spice mixture.

Pour in the coconut milk and bring to a simmer. Cover and cook for 20 minutes or until the sweet potatoes are tender.

Garnish with fresh coriander and serve hot with rice or bread.
