  • 1 pound Potatoes
  • 1 small Red Onion
  • 1 medium Cucumber
  • 2 tablespoon Fresh Dill
  • 2 tablespoon Lemon Juice
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
Instructions
  1. Boil the potatoes until fork-tender.
  2. Drain and let cool.
  3. Dice the red onion and cucumber.
  4. In a large bowl, combine the potatoes, red onion, cucumber, fresh dill, lemon juice, olive oil, salt, and black pepper.
  5. Mix well until everything is evenly coated.
