Ingredients
  • 2 cup Navy beans
  • 4 cup Vegetable broth
  • 2 medium Carrots
  • 2 stalk Celery stalks
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 leaf Bay leaves
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
Instructions
  1. Rinse and soak the navy beans overnight.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onion, minced garlic, sliced carrots, and celery stalks. Cook until vegetables are tender.
  4. Drain and rinse the soaked navy beans, then add them to the pot.
  5. Pour in vegetable broth, add bay leaves and thyme. Season with salt and black pepper.
  6. Bring the soup to a boil, then reduce heat and simmer for about 1 hour or until the beans are tender.
  7. Remove bay leaves and serve hot.
