Ingredients
  • 2 cup Oats
  • 1 ripe Banana
  • 2 tablespoon Maple Syrup
  • 2 tablespoon Coconut Oil
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1/4 cup Raisins
  • 1/4 cup Dried Cranberries
  • 1/4 cup Shredded Coconut
Instructions
  1. Preheat the oven to 350°F (180°C).
  2. In a large bowl, mash the ripe banana.
  3. Add the maple syrup, coconut oil, and vanilla extract to the bowl and mix well.
  4. In a separate bowl, combine the oats, cinnamon, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until well combined.
  6. Fold in the raisins, dried cranberries, and shredded coconut.
  7. Line a baking sheet with parchment paper.
  8. Scoop spoonfuls of the cookie dough onto the baking sheet, spacing them apart.
  9. Flatten each cookie slightly with the back of a spoon.
  10. Bake for 12-15 minutes or until golden brown.
  11. Remove from the oven and let the cookies cool on the baking sheet for 10 minutes.
