Preheat the oven to 350°F (180°C).

In a large bowl, mash the ripe banana.

Add the maple syrup, coconut oil, and vanilla extract to the bowl and mix well.

In a separate bowl, combine the oats, cinnamon, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients and mix until well combined.

Fold in the raisins, dried cranberries, and shredded coconut.

Line a baking sheet with parchment paper.
