  • 2 cup Butternut Squash
  • 1 cup Corn
  • 1 cup Beans
  • 1 medium Onion
  • 2 clove Garlic
  • 4 cup Vegetable Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 1 tablespoon Olive Oil
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and cook until onion is translucent.
  2. Add butternut squash, corn, beans, vegetable broth, cumin, chili powder, salt, and pepper to the pot. Stir well.
  3. Bring the stew to a boil, then reduce the heat to low and simmer for 30 minutes, or until the squash is tender.
  4. Remove from heat and let the stew rest for 10 minutes before serving.
  5. Serve hot and enjoy!
