Ingredients
  • 200 gram Mushrooms
  • 200 gram Rice noodles
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 2 tablespoon Soy sauce
  • 2 tablespoon Lime juice
  • 1 teaspoon Red chili flakes
  • 2 tablespoon Cilantro
  • 2 stalk Green onions
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. In a large pot, heat some oil over medium heat. Add garlic and ginger, sauté for a minute.
  2. Add mushrooms and cook until they release their moisture and turn golden brown.
  3. Add vegetable broth, coconut milk, soy sauce, lime juice, red chili flakes, salt, and black pepper. Bring to a boil.
  4. Reduce heat and simmer for 15 minutes.
  5. Cook rice noodles according to package instructions.
  6. Drain the noodles and divide them among serving bowls.
  7. Ladle the soup over the noodles.
  8. Garnish with cilantro and green onions.
  9. Serve hot.
