Ingredients
  • 2 teaspoon Olive oil
  • 1 medium Onion
  • 1 medium Bell pepper
  • 2 medium Celery stalks
  • 3 minced Garlic cloves
  • 1 teaspoon Creole seasoning
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Thyme
  • 2 whole Bay leaves
  • 4 cup Vegetable broth
  • 1 diced Tomatoes
  • 1 sliced Okra
  • 8 sliced Mushrooms
  • 4 chopped Green onions
  • 2 chopped Parsley
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 cup Cooked rice
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, bell pepper, celery, and garlic. Sauté until vegetables are tender.
  3. Add creole seasoning, smoked paprika, thyme, and bay leaves. Stir well.
  4. Pour in vegetable broth and bring to a boil.
  5. Add tomatoes, okra, and mushrooms. Simmer for 20 minutes.
  6. Stir in green onions, parsley, salt, and black pepper. Simmer for another 10 minutes.
  7. Serve the gumbo over cooked rice. Enjoy!
