Ingredients
  • 200 gram Mushrooms
  • 1 cup Barley
  • 4 cup Vegetable broth
  • 1 medium Onion
  • 1 medium Carrot
  • 2 medium Celery stalks
  • 2 clove Garlic cloves
  • 1 teaspoon Thyme
  • 1 leaf Bay leaf
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh parsley
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onions, carrots, celery, and garlic. Cook until vegetables are tender.
  2. Add mushrooms and cook until they release their moisture.
  3. Add barley, vegetable broth, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 40 minutes.
  4. Remove bay leaf and thyme sprigs. Serve hot, garnished with fresh parsley.
