Ingredients
  • 200 gram Mushrooms
  • 100 gram Lentils
  • 1 piece Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Lemon juice
  • 1 tablespoon Parsley
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and cook until onion is translucent.
  2. Add sliced mushrooms and cook until they release their moisture and start to brown.
  3. Add lentils, thyme, salt, and black pepper. Stir well.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and let simmer for about 20 minutes, or until lentils are tender.
  5. Use an immersion blender or transfer the soup to a blender, and blend until smooth.
  6. Stir in lemon juice and adjust seasoning if needed.
  7. Serve hot, garnished with fresh parsley.
