Ingredients
  • 2 cup Rolled oats
  • 1/2 cup Almonds, chopped
  • 1/4 cup Pumpkin seeds
  • 1/4 cup Dried cranberries
  • 1/4 cup Dried apricots, chopped
  • 1/2 cup Honey
  • 1/4 cup Peanut butter
  • 1/2 teaspoon Vanilla extract
  • 1/4 teaspoon Salt
Instructions
  1. Preheat the oven to 350°F (175°C). Line a baking dish with parchment paper.
  2. In a large bowl, combine the rolled oats, almonds, pumpkin seeds, dried cranberries, and dried apricots.
  3. In a small saucepan, heat the honey, peanut butter, vanilla extract, and salt over low heat until melted and well combined.
  4. Pour the honey mixture over the oat mixture and mix until all the ingredients are evenly coated.
  5. Transfer the mixture to the prepared baking dish and press it down firmly.
  6. Bake for 15-20 minutes, or until the edges are golden brown.
  7. Remove from the oven and let it cool completely in the baking dish.
  8. Once cooled, cut into bars and enjoy!
