Ingredients
  • 1 cup Quinoa
  • 1 can Chickpeas
  • 1 medium Red bell pepper
  • 1 medium Cucumber
  • 1 cup Cherry tomatoes
  • 1 small Red onion
  • 1 bunch Fresh parsley
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Cook quinoa according to package instructions.
  2. Drain and rinse the chickpeas.
  3. Chop the red bell pepper, cucumber, cherry tomatoes, red onion, and fresh parsley.
  4. In a large bowl, combine the cooked quinoa, chickpeas, chopped vegetables, and fresh parsley.
  5. In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.
  6. Pour the dressing over the quinoa mixture and toss to combine.
  7. Serve the Mountain Breeze salad chilled.
