  • 500 gram Sweet Potatoes
  • 1 piece Onion
  • 2 piece Garlic Cloves
  • 2 piece Carrots
  • 1 can Chickpeas
  • 2 tablespoon Tomato Paste
  • 1 teaspoon Cumin
  • 1 teaspoon Cinnamon
  • 1 teaspoon Ground Ginger
  • 1 teaspoon Paprika
  • 500 milliliter Vegetable Stock
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Fresh Cilantro
Instructions
  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic cloves, and sauté until fragrant.
  2. Add the diced sweet potatoes, carrots, and spices (cumin, cinnamon, ginger, paprika), and stir well to coat the vegetables in the spices.
  3. Pour in the vegetable stock and bring to a boil. Reduce heat to low and simmer for 20-25 minutes, or until the sweet potatoes and carrots are tender.
  4. Add the chickpeas and tomato paste to the pot, and stir to combine. Cook for an additional 5 minutes.
  5. Season with salt and black pepper, to taste. Remove from heat and let the stew rest for a few minutes.
  6. Serve the Moroccan Sweet Potato Stew hot, garnished with fresh cilantro.
