Ingredients
  • 1 cup Quinoa
  • 1 can Chickpeas
  • 1 medium Cucumber
  • 2 medium Tomatoes
  • 1 small Red onion
  • 1 cup Fresh parsley
  • 1 cup Fresh mint leaves
  • 1 juice of Lemon
  • 2 tablespoon Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Cook quinoa according to package instructions. In a large bowl, combine cooked quinoa, chickpeas, cucumber, tomatoes, red onion, parsley, and mint leaves. In a small bowl, whisk together lemon juice, olive oil, ground cumin, ground coriander, salt, and black pepper. Pour the dressing over the quinoa mixture and toss to combine. Serve chilled.
