Ingredients
  • 2 cup Couscous
  • 2 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 1 medium Carrot
  • 2 clove Garlic
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Ground cinnamon
  • 1 can Chickpeas
  • 0.5 cup Raisins
  • 2 tablespoon Fresh cilantro
  • 2 tablespoon Fresh mint leaves
  • 2 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. In a large saucepan, heat olive oil over medium heat. Add onion, carrot, and garlic. Cook until softened, about 5 minutes.
  2. Add ground cumin, ground coriander, and ground cinnamon. Stir well to coat the vegetables.
  3. Add vegetable broth and bring to a boil. Stir in couscous, cover, and remove from heat. Let it sit for 10 minutes.
  4. Fluff the couscous with a fork. Stir in chickpeas, raisins, fresh cilantro, fresh mint leaves, lemon juice, salt, and black pepper.
  5. Serve hot and enjoy!
