Moroccan soup, also known as Harira, is traditionally served during Ramadan to break the fast at sunset.

Ingredients
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 medium Carrots
  • 2 medium Potatoes
  • 1 medium Red bell pepper
  • 1 can Chickpeas
  • 1 can Tomatoes
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground turmeric
  • 0.5 teaspoon Ground cinnamon
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
  • 2 tablespoon Fresh lemon juice
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until onion is translucent.
  2. Add carrots, potatoes, and red bell pepper, and cook for 5 minutes.
  3. Stir in ground cumin, ground coriander, ground turmeric, ground cinnamon, salt, and black pepper. Cook for 1 minute.
  4. Add chickpeas, tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Remove from heat and let the soup rest for 5 minutes.
  6. Stir in fresh cilantro and fresh lemon juice.
  7. Serve hot and enjoy!
