  • 1.5 cup Basmati rice
  • 1 can Chickpeas
  • 1 medium Cucumber
  • 1 cup Cherry tomatoes
  • 1 medium Red bell pepper
  • 1 small Red onion
  • 0.5 cup Fresh parsley
  • 0.5 cup Fresh mint
  • 3 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Cook the basmati rice according to package instructions. Once cooked, fluff it with a fork and let it cool.
  2. In a large bowl, combine the cooked rice, chickpeas, cucumber, cherry tomatoes, red bell pepper, red onion, fresh parsley, and fresh mint.
  3. In a small bowl, whisk together the lemon juice, olive oil, ground cumin, ground coriander, salt, and black pepper.
  4. Pour the dressing over the rice mixture and toss to combine.
