Ingredients
  • 1.5 cup Basmati rice
  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1/2 teaspoon Ground turmeric
  • 1 piece Cinnamon stick
  • 2.5 cup Vegetable broth
  • 1/4 cup Raisins
  • 1/4 cup Slivered almonds
  • 2 tablespoon Fresh cilantro
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Instructions
  1. Rinse the rice under cold water until the water runs clear.
  2. Heat olive oil in a large saucepan over medium heat. Add the onion and garlic, and cook until softened.
  3. Add the ground cumin, ground coriander, ground turmeric, and cinnamon stick. Cook for another minute, stirring constantly.
  4. Add the rinsed rice to the saucepan and stir to coat it with the spices.
  5. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes, or until the rice is tender and the liquid is absorbed.
  6. Remove from heat and let it rest for 5 minutes. Fluff the rice with a fork.
  7. In a separate small pan, toast the slivered almonds until golden brown.
  8. Serve the Moroccan Rice Pilaf garnished with toasted almonds and fresh cilantro.
