Ingredients
  • 1 cup Red lentils
  • 1 bunch Kale
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 medium Carrot
  • 2 stalk Celery stalks
  • 1 can Tomatoes
  • 4 cup Vegetable broth
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 1 teaspoon Paprika
  • 1 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 2 tablespoon Olive oil
  • 2 tablespoon Lemon juice
Instructions
  1. Rinse the lentils and set aside.
  2. Heat olive oil in a large pot over medium heat.
  3. Add the onion, garlic, carrot, and celery. Cook until softened.
  4. Add the cumin, coriander, paprika, and cayenne pepper. Stir well.
  5. Add the lentils, tomatoes, and vegetable broth. Bring to a boil.
  6. Reduce heat and simmer for 30 minutes.
  7. Add the kale and cook for an additional 10 minutes.
  8. Stir in lemon juice and salt.
  9. Serve hot and enjoy!
