Ingredients
  • 500 gram Eggplant
  • 4 teaspoon Olive oil
  • 2 clove Garlic
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground paprika
  • 1 teaspoon Salt
  • 2 tablespoon Fresh parsley
  • 4 piece Lemon wedges
Instructions
  1. Slice the eggplant into rounds.
  2. Sprinkle salt on both sides of the eggplant slices and let them sit for 15 minutes to remove excess moisture.
  3. Rinse the eggplant slices and pat them dry.
  4. Heat olive oil in a frying pan over medium heat.
  5. Fry the eggplant slices until golden brown on both sides.
  6. Remove the eggplant slices from the pan and set them aside.
  7. In the same pan, add minced garlic and cook until fragrant.
  8. Add ground cumin, ground coriander, and ground paprika to the pan and cook for another minute.
  9. Return the eggplant slices to the pan and toss them with the spices.
  10. Cook for another 2-3 minutes to allow the flavors to meld.
  11. Remove from heat and garnish with fresh parsley.
  12. Serve the Moroccan fried eggplant with lemon wedges on the side.
