Ingredients
  • 1 cup Couscous
  • 1 pound Green Beans
  • 1 medium Onion
  • 2 clove Garlic
  • 2 tablespoon Olive Oil
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Ground Turmeric
  • 1 teaspoon Ground Cinnamon
  • 2 cup Vegetable Stock
  • 2 tablespoon Lemon Juice
  • 2 tablespoon Fresh Mint Leaves
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Cook the couscous according to package instructions.
  2. In a large pot, heat olive oil over medium heat. Add the onion and garlic, and cook until softened.
  3. Add the ground cumin, ground coriander, ground turmeric, and ground cinnamon to the pot. Stir to coat the onions and garlic in the spices.
  4. Add the green beans and vegetable stock to the pot. Bring to a boil, then reduce heat and simmer for 10-15 minutes, until the green beans are tender.
  5. Fluff the cooked couscous with a fork and add it to the pot. Stir to combine with the green beans and spices.
  6. Remove from heat and let the couscous and green beans rest for 5 minutes.
  7. Stir in lemon juice, fresh mint leaves, salt, and black pepper.
  8. Serve hot and enjoy!
