Ingredients
  • 2 cup Chickpeas
  • 2 medium Carrot
  • 10 pitted Dates
  • 1 medium Onion
  • 2 clove Garlic
  • 2 tablespoon Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Paprika
  • 1 cup Vegetable broth
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
  • 1 tablespoon Lemon juice
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and cook until softened.
  2. Add carrots, chickpeas, dates, cumin, coriander, cinnamon, and paprika. Stir well to coat the ingredients.
  3. Pour in vegetable broth and season with salt and black pepper. Bring to a simmer and cook for 20 minutes, or until the carrots are tender.
  4. Remove from heat and stir in fresh cilantro and lemon juice.
  5. Let the dish rest for 5 minutes before serving.
  6. Serve hot with couscous or rice, if desired.
