Ingredients
  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 3 minced Garlic cloves
  • 2 medium Carrots
  • 2 chopped Celery stalks
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Paprika
  • 1/2 teaspoon Cayenne pepper
  • 1 can Canned chickpeas
  • 1 can Diced tomatoes
  • 4 cups Vegetable broth
  • 2 tablespoon Lemon juice
  • 1/4 cup chopped Fresh cilantro
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until onion is translucent. Add carrots, celery, cumin, coriander, paprika, and cayenne pepper. Stir well to coat the vegetables with the spices. Add chickpeas, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes. Using an immersion blender or a regular blender, blend the soup until smooth. Stir in lemon juice, fresh cilantro, salt, and black pepper. Cook for an additional 5 minutes. Serve hot and garnish with additional cilantro, if desired.
