Ingredients
  • 2 cup Chickpeas
  • 1 medium Onion
  • 3 clove Garlic
  • 1 medium Bell pepper
  • 1 can Tomatoes
  • 2 tablespoon Tomato paste
  • 1 cup Vegetable broth
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh cilantro
  • 4 piece Lime wedges
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion, minced garlic, and diced bell pepper. Cook until softened, about 5 minutes.
  2. Add ground cumin, ground coriander, smoked paprika, cayenne pepper, salt, and black pepper. Stir well to coat the vegetables with the spices.
  3. Add chickpeas, canned tomatoes, tomato paste, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Serve hot with a sprinkle of fresh cilantro and lime wedges on the side.
