Ingredients
  • 500 gram Cauliflower
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground turmeric
  • 0.5 teaspoon Ground cinnamon
  • 4 cup Vegetable broth
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 2 tablespoon Fresh cilantro
Instructions
  1. Heat olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened.
  2. Add the cauliflower florets, ground cumin, ground coriander, ground turmeric, and ground cinnamon. Stir well to coat the cauliflower with the spices.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until the cauliflower is tender.
  4. Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches.
  5. Stir in the lemon juice and season with salt to taste.
  6. Serve hot, garnished with fresh cilantro.
