Ingredients
  • 1 cup Lentils
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 medium Carrot
  • 2 tablespoon Tomato paste
  • 2 cup Vegetable broth
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Cayenne pepper
  • 0.5 teaspoon Salt
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh cilantro
  • 4 piece Lemon wedges
Instructions
  1. Rinse the lentils under cold water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion, garlic, and carrot. Cook until softened.
  4. Stir in tomato paste, cumin, coriander, cinnamon, cayenne pepper, and salt.
  5. Add lentils and vegetable broth. Bring to a boil.
  6. Reduce heat, cover, and simmer for 30-40 minutes or until lentils are tender.
  7. Remove from heat and let it rest for 10 minutes.
  8. Garnish with fresh cilantro and serve with lemon wedges.
