Ingredients
  • 500 gram Pumpkin
  • 1 cup Coconut milk
  • 1/2 cup Sugar
  • 1/2 teaspoon Cardamom powder
  • 1/2 teaspoon Cinnamon powder
  • 1/2 teaspoon Vanilla extract
  • 1/4 cup Almonds
  • 1/4 cup Cashews
  • 1/4 cup Raisins
  • 1/4 cup Desiccated coconut
  • 1 tablespoon Ghee
Instructions
  1. Preheat the oven to 180°C.
  2. Cut the pumpkin into small cubes and steam until soft.
  3. In a blender, blend the steamed pumpkin, coconut milk, sugar, cardamom powder, cinnamon powder, and vanilla extract until smooth.
  4. Grease a baking dish with ghee and pour the pumpkin mixture into it.
  5. Sprinkle almonds, cashews, raisins, and desiccated coconut on top.
  6. Bake in the preheated oven for 45 minutes or until the top is golden brown.
  7. Remove from the oven and let it rest for 30 minutes.
  8. Serve warm or chilled.
