Ingredients
  • 2 cup Corn kernels
  • 2 medium Potatoes
  • 1 small Onion
  • 1 medium Carrot
  • 1 stalk Celery stalk
  • 4 cup Vegetable broth
  • 1 leaf Bay leaf
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Chopped parsley
Instructions
  1. In a large pot, combine the corn kernels, potatoes, onion, carrot, celery, vegetable broth, bay leaf, thyme, salt, and black pepper.
  2. Bring the mixture to a boil, then reduce the heat to low and simmer for 30 minutes, or until the vegetables are tender.
  3. Remove the bay leaf and discard.
  4. Use an immersion blender to blend the soup until smooth, or transfer to a blender and blend in batches.
  5. Return the soup to the pot and heat over low heat for 5 minutes.
  6. Serve hot, garnished with chopped parsley.
