Ingredients
  • 200 gram Carrots
  • 200 gram Potatoes
  • 100 gram Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 1 cup Tomatoes
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh cilantro
  • 2 tablespoon Lime juice
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and cook until softened.
  2. Add cumin, paprika, salt, and pepper, and stir for 1 minute.
  3. Add diced carrots, potatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes or until vegetables are tender.
  4. Add diced tomatoes and cook for an additional 5 minutes.
  5. Remove from heat and let the soup rest for 5 minutes.
  6. Blend the soup until smooth using an immersion blender or regular blender.
  7. Stir in lime juice and fresh cilantro.
  8. Serve hot and enjoy!
