Ingredients
  • 1 cup Millet
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 2 clove Garlic
  • 1 cup Mushrooms
  • 1 cup Spinach
  • 2 tablespoon Parmesan cheese
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. In a saucepan, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.
  2. Add mushrooms and cook until they release their moisture.
  3. Add millet and stir for a minute.
  4. Gradually add vegetable broth, stirring occasionally, until millet is cooked and creamy.
  5. Stir in spinach, parmesan cheese, salt, and black pepper.
  6. Let it rest for 5 minutes before serving.
  7. Garnish with additional parmesan cheese if desired.
