Ingredients
  • 500 gram Zucchini
  • 1 medium Onion
  • 2 clove Garlic
  • 2 tablespoon Fresh dill
  • 2 tablespoon Fresh parsley
  • 1 cup Chickpea flour
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1/2 cup Vegetable oil
Instructions
  1. Grate the zucchini and onion, then squeeze out any excess moisture.
  2. In a large bowl, combine the grated zucchini, onion, minced garlic, chopped dill, chopped parsley, chickpea flour, ground cumin, ground coriander, salt, and black pepper. Mix well.
  3. Heat vegetable oil in a frying pan over medium heat.
  4. Take spoonfuls of the zucchini mixture and shape them into patties. Place the patties in the hot oil and fry until golden brown on both sides.
  5. Remove the fritters from the pan and place them on a paper towel-lined plate to drain excess oil.
  6. Serve the Middle Eastern Zucchini Fritters hot as an appetizer or side dish. Enjoy!
