Ingredients
  • 2 cup White beans
  • 1 medium Onion
  • 3 clove Garlic cloves
  • 2 tablespoon Olive oil
  • 1 tablespoon Tomato paste
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Salt
  • 4 cup Water
  • 2 tablespoon Fresh parsley
  • 1 tablespoon Lemon juice
Instructions
  1. Soak the white beans overnight in water.
  2. Drain and rinse the beans.
  3. In a large pot, heat olive oil over medium heat.
  4. Add chopped onion and minced garlic cloves. Sauté until golden brown.
  5. Stir in tomato paste, ground cumin, ground coriander, and salt. Cook for 2 minutes.
  6. Add the soaked white beans and water to the pot.
  7. Bring to a boil, then reduce heat and simmer for 1 hour or until the beans are tender.
  8. Remove from heat and let it rest for 10 minutes.
  9. Serve the Middle Eastern White Beans garnished with fresh parsley and a squeeze of lemon juice.
