Ingredients
  • 500 gram Zucchini
  • 2 clove Garlic
  • 2 tablespoon Tahini
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 2 tablespoon Fresh parsley
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Cut the zucchini into thick slices and place them on a baking sheet.
  3. Drizzle with olive oil, sprinkle with salt, and roast for 15-20 minutes until tender.
  4. In a food processor, combine the roasted zucchini, garlic, tahini, lemon juice, cumin, and paprika. Blend until smooth.
  5. Transfer the dip to a serving bowl and garnish with fresh parsley.
  6. Serve warm with pita bread or vegetable sticks.
