Preheat the oven to 400°F (200°C).

Cut the zucchini into thick slices and place them on a baking sheet.

Drizzle with olive oil, sprinkle with salt, and roast for 15-20 minutes until tender.

In a food processor, combine the roasted zucchini, garlic, tahini, lemon juice, cumin, and paprika. Blend until smooth.

Transfer the dip to a serving bowl and garnish with fresh parsley.
