Ingredients
  • 1 cup Buckwheat flour
  • 1.5 cup Water
  • 0.5 teaspoon Salt
  • 1 cup Carrots
  • 1 cup Cucumber
  • 1 cup Bell pepper
  • 8 piece Lettuce leaves
  • 4 tablespoon Mint leaves
  • 4 tablespoon Cilantro leaves
  • 8 piece Rice paper wrappers
Instructions
  1. In a mixing bowl, combine buckwheat flour, water, and salt. Mix well to form a smooth batter.
  2. Heat a non-stick pan over medium heat. Pour a ladleful of batter onto the pan and spread it evenly to form a thin crepe. Cook for 1-2 minutes on each side until golden brown. Repeat with the remaining batter.
  3. Julienne the carrots, cucumber, and bell pepper.
  4. Dip a rice paper wrapper in warm water for a few seconds until it becomes pliable. Place it on a clean surface.
  5. Arrange lettuce leaves, mint leaves, cilantro leaves, and julienned vegetables on the lower third of the rice paper wrapper.
  6. Fold the sides of the wrapper over the filling and roll tightly to form a spring roll.
  7. Repeat with the remaining rice paper wrappers and filling.
  8. Serve the fresh spring rolls with a dipping sauce of your choice.
