  • 1 cup Lentils
  • 1 cup Quinoa
  • 1 cup Carrots
  • 1 medium Onion
  • 2 clove Garlic
  • 2 tablespoon Flaxseed Meal
  • 2 tablespoon Tomato Paste
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Worcestershire Sauce
  • 1 cup Breadcrumbs
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Paprika
  • 0.5 cup Ketchup
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, cook the lentils and quinoa according to package instructions.
  3. In a large skillet, sauté the carrots, onion, and garlic until softened.
  4. In a large bowl, combine the cooked lentils, quinoa, sautéed vegetables, flaxseed meal, tomato paste, soy sauce, Worcestershire sauce, breadcrumbs, salt, black pepper, and paprika. Mix well.
  5. Transfer the mixture to a greased loaf pan and press it down evenly.
  6. Spread ketchup on top of the loaf.
  7. Bake in the preheated oven for 45-50 minutes.
  8. Remove from the oven and let it rest for 10 minutes before slicing.
  9. Serve hot and enjoy!
