Ingredients
  • 2 cup Black-eyed peas
  • 1 cup Rice
  • 1 medium Onion
  • 1 medium Bell pepper
  • 2 medium Celery stalk
  • 2 clove Garlic cloves
  • 1 teaspoon Thyme
  • 1 teaspoon Smoked paprika
  • 1/2 teaspoon Cayenne pepper
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 stalks Green onions
  • 1 tablespoon Parsley
  • 1 tablespoon Lemon juice
  • 1 tablespoon Olive oil
Instructions
  1. In a large pot, bring 4 cups of water to a boil. Add the black-eyed peas and cook for 20 minutes until tender. Drain and set aside.
  2. In the same pot, heat olive oil over medium heat. Add the onion, bell pepper, celery, and garlic. Cook until softened, about 5 minutes.
  3. Add the thyme, smoked paprika, cayenne pepper, salt, and black pepper. Stir well.
  4. Add the cooked black-eyed peas and rice to the pot. Stir to combine.
  5. Pour in 2 cups of water and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes until the rice is cooked.
  6. Remove from heat and let it rest for 5 minutes.
  7. Stir in the green onions, parsley, and lemon juice.
  8. Serve hot and enjoy!
