Ingredients
  • 8 ounce Macaroni
  • 1 can Kidney beans
  • 1 can Diced tomatoes
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh cilantro
  • 4 wedge Lime
Instructions
  1. Cook the macaroni according to package instructions. Drain and set aside.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic cloves. Cook until onion becomes translucent.
  3. Add chili powder, cumin, paprika, salt, and black pepper to the pot. Stir well to coat the onions and garlic.
  4. Add diced tomatoes (with their juice) and kidney beans (drained and rinsed) to the pot. Stir to combine.
  5. Bring the mixture to a simmer and let it cook for about 10 minutes, stirring occasionally.
  6. Add the cooked macaroni to the pot and stir until well combined.
  7. Remove from heat and let it rest for 5 minutes.
  8. Serve hot, garnished with fresh cilantro and a squeeze of lime juice.
