Ingredients
  • 2 cup Pigeon peas
  • 1 cup Coconut milk
  • 1 medium Onion
  • 3 minced Garlic cloves
  • 1 medium Tomato
  • 1 teaspoon Turmeric powder
  • 1/2 teaspoon Cayenne pepper
  • 1/2 teaspoon Salt
  • For garnish finely chopped Cilantro (coriander leaves)
Instructions
  1. Rinse the pigeon peas and place them in a large pot.
  2. Add enough water to cover the peas and bring to a boil over medium heat.
  3. Reduce heat to low and simmer for 20 minutes, or until the peas are tender.
  4. While the peas are cooking, heat coconut milk in a separate saucepan over medium heat.
  5. In another pan, sauté the onion and garlic until fragrant and translucent.
  6. Add the tomato, turmeric powder, cayenne pepper, and salt to the onion and garlic mixture. Cook for a few minutes.
  7. Pour the tomato mixture into the pot with the cooked pigeon peas and stir well.
  8. Simmer for an additional 5 minutes to allow the flavors to blend.
  9. Remove from heat and let the dish rest for 5 minutes.
  10. Serve hot, garnished with cilantro.
