Ingredients
  • 12 ounce Tofu
  • 3 tablespoon Massaman Curry Paste
  • 2 cup Coconut Milk
  • 1 cup Potatoes
  • 1 cup Onion
  • 2 tablespoon Peanuts
  • 1 tablespoon Brown Sugar
  • 2 tablespoon Fish Sauce
  • 1 tablespoon Lime Juice
  • 1 teaspoon Salt
  • 2 tablespoon Vegetable Oil
  • 2 tablespoon Fresh Coriander
Instructions
  1. Heat vegetable oil in a pan and fry tofu until golden brown. Set aside.
  2. In the same pan, sauté onion until translucent.
  3. Add massaman curry paste and cook for 1 minute.
  4. Add coconut milk, potatoes, peanuts, brown sugar, fish sauce, lime juice, and salt. Stir well.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes or until potatoes are tender.
  6. Add fried tofu and cook for an additional 5 minutes.
  7. Garnish with fresh coriander.
  8. Serve hot with steamed rice.
