Ingredients
  • 1.5 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 2 tablespoon Lemon zest
  • 2 tablespoon Lemon juice
  • 1 cup Unsweetened applesauce
  • 2 tablespoon Coconut oil
  • 1 teaspoon Vanilla extract
  • 0.5 cup Non-dairy milk
  • 0.5 cup Stevia or other sugar substitute
Instructions
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large mixing bowl, combine the flour, baking powder, salt, and lemon zest.
  3. In a separate bowl, whisk together the lemon juice, applesauce, coconut oil, vanilla extract, non-dairy milk, and sugar substitute.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Pour the batter into the greased loaf pan and smooth the top.
  6. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let the loaf cool in the pan for 10 minutes.
  8. Transfer the loaf to a wire rack and let it cool completely before slicing and serving.
