Ingredients
  • 16 ounce Radishes
  • 4 cup Vegetable broth
  • 2 teaspoon Balsamic vinegar
  • 1 cup Cherries
  • 2 tablespoon Fresh mint leaves
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. In a large pot, bring the vegetable broth to a boil.
  2. Add the radishes and simmer for 10 minutes until they are tender.
  3. Meanwhile, in a small saucepan, heat the balsamic vinegar over medium heat until it reduces by half.
  4. Add the cherries to the saucepan and cook for 5 minutes until they soften.
  5. Remove the radishes from the pot and blend them with the mint leaves using a blender or immersion blender.
  6. Return the blended radishes to the pot and stir in the olive oil, salt, and black pepper.
  7. Serve the soup hot, topped with the balsamic cherries.
