Ingredients
  • 2 cup Navy Beans
  • 2 medium Zucchini
  • 1 small Red Onion
  • 1 cup Cherry Tomatoes
  • 2 tablespoon Fresh Parsley
  • 4 tablespoon Fresh Lemon Juice
  • 2 tablespoon Olive Oil
  • 2 clove Garlic
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Rinse and drain the navy beans.
  2. In a large pot, bring water to a boil and cook the navy beans for 10 minutes. Drain and set aside.
  3. Cut the zucchini into thin slices and grill them for 5 minutes on each side. Set aside.
  4. Thinly slice the red onion and halve the cherry tomatoes.
  5. In a large bowl, combine the navy beans, grilled zucchini, red onion, cherry tomatoes, fresh parsley, fresh lemon juice, olive oil, minced garlic, salt, and black pepper.
  6. Mix well and let marinate for at least 30 minutes.
  7. Serve chilled and enjoy!
