Ingredients
  • 500 gram Beets
  • 1 small Red onion
  • 100 gram Feta cheese
  • 50 gram Walnuts
  • 1 bunch Fresh parsley
  • 2 tablespoon Olive oil
  • 2 tablespoon Lemon juice
  • 1 tablespoon Honey
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Peel and grate the beets.
  2. Thinly slice the red onion.
  3. In a large bowl, combine the grated beets, sliced red onion, crumbled feta cheese, chopped walnuts, and chopped fresh parsley.
  4. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and black pepper.
  5. Pour the dressing over the beet mixture and toss to combine.
  6. Cover the bowl and let the salad marinate in the refrigerator for at least 30 minutes.
  7. Serve chilled and enjoy!
