Ingredients
  • 2 piece Bell peppers
  • 1 piece Zucchini
  • 1 piece Eggplant
  • 1 piece Red onion
  • 1 cup Cherry tomatoes
  • 2 tablespoon Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Slice the bell peppers, zucchini, eggplant, and red onion into bite-sized pieces.
  3. In a large bowl, combine the sliced vegetables with cherry tomatoes, olive oil, garlic powder, paprika, salt, and black pepper. Toss well to coat.
  4. Spread the vegetables evenly on a baking sheet.
  5. Roast in the preheated oven for 20 minutes, or until the vegetables are tender and slightly charred.
  6. Remove from the oven and let it rest for 5 minutes.
  7. Garnish with fresh parsley and serve hot.
