  • 1 pound Sweet Potatoes
  • 1 pound Carrots
  • 2 tablespoon Maple Syrup
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Peel and cut the sweet potatoes and carrots into 1-inch chunks.
  3. In a large bowl, combine the sweet potatoes, carrots, maple syrup, olive oil, salt, and black pepper. Toss until well coated.
  4. Spread the vegetables in a single layer on a baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and caramelized, stirring once halfway through.
